Local venison gains attention

Wiseleigh resident, Dominic Britten, knows the importance of good food.
Mr Britten is an erstwhile chef who comes from a background where gastronomy was virtually a religion.
His parents ran eateries in New Zealand and his father, the late Sir Des Britten, was a revered New Zealand restaurateur, television chef and cookbook writer.
Well known for his 1970s television cooking show, Des Britten rose to prominence as one of New Zealand's first celebrity chefs, before being ordained as an Anglican priest in 1983 and serving as the Wellington City Missioner for almost two decades.
Dominic Britten arrived in Australia from New Zealand 25 years ago where he worked as a chef in Sydney for many years before arriving in East Gippsland in 2014.
Since moving here and establishing his home in Wiseleigh three years ago, Mr Britten would observe the large number of Sambar deer roaming around his 30-acre property that he shares with his wife, Tracie, and wondered why no one was eating venison.
"They're everywhere," Mr Britten said of the ubiquitous animal.
